Grape Salad

1 large bunch green grapes
1 large bunch red grapes

12 oz cream cheese
8 oz sour cream
½ cup sugar
1 Tbsp vanilla

Cream together last 4 ingredients, add grapes (make sure they are washed and DRIED).

Topping (add just before serving):

Equal parts brown sugar and pecan chips (usually about 1/3 cup of each, but I always make extra for after the top layer is eaten)

Yummy Salmon

2t. lemon pepper
2t. salt
2t. garlic powder
2 cans chicken broth
1/3c. lemon juice
1/2 c. soy sauce
3/4 c. brown sugar
Salmon (Costco's fresh salmon is the best!)


Mix all & pour over salmon in disposable 13 x 9 baking tin. Let marinade 1-2 hrs. Cook on grill in pan about 30 min on med-low heat (check it frequently). For extra yumminess, top w/ sautee'd mushrooms!





Sara's Sweet Potatoes

6 sweet potatoes or yams
1 c. flour
2 c. brown sugar
2 c. sugar
6 eggs
1 2/3 c. butter
2 T. vanilla
1 c. chopped pecans
1 c. heavy whipping cream


Cook and mash 6 cups sweet potatoes or yams. Mix in the eggs, white sugar,1 c. butter, vanilla & whipping cream. Pour in 13 x 9 pan. In seperate bowl mix, the flour, brown sugar, 2/3 c. melted butter & pecans. Spread on top of potatoes. Bake @ 375° 45 min

Breakfast Casserole

1 bag (32 oz ) frozen shredded hashbrowns
8 eggs
2 cups diced ham or bacon (sometimes I do both)
1 can evaporated milk
2 c cheddar cheese
2 c monterey jack cheese
1 cube butter

Spray 9x13 pan and spread frozen hashbrowns in. Melt butter and pour over. Bake @ 425° for 20 min. Wisk eggs, milk in bowl. Stir in ham and 1c. chedder cheese and 1c. monterey jack cheese. Pour over hashbrowns and sprinkle remaining cheese over top. Bake 30 min. @ 350°Top with salt/pepper, salsa and sour cream!

Toffee Cereal Treat (Chex Mix)

Toffee Cereal Treat (Chex Mix)

*Mix together in a bowl and set aside
1 box Golden Grahams
1 box Rice Chex
2 cups coconut
2 cups slivered almonds

On stove add:
1 pound of butter (yikes!)
2 cups sugar
2 cups karo
Boil for 4 minutes. Pour over dry mixture and stir well.


Tomatillo Dressing

Tomatillo Dressing

1 1/3 cup sour cream
3/4 cup mayo
1 package Ranch Buttermilk Dressing Mix
1/3 cup Salsa Verde
1 bunch washed fresh cilantro
2 cloves crushed garlic
3 dashes Tobasco Sauce

Blend all ingredients in a blend and blend until mixed. Refrigerate at least 1 hour before serving.

I was thinking that it may be easier for everyone if we all knew what recipes people wanted. I'm not sure the best way to do this. Maybe either create a new post and list your requests, or list them in the comments here? Whatdoya'llthink?!?

Strawberry Salad

Spring Lettuce Mix
Carton of Strawberries
Cubed Monterey Jack Cheese
Sugared Nuts
Dressing

Dressing:
1 C. oil
3/4 C. sugar
1/2 C. red wine vinegar
2 cloves garlic
1/2 tsp. salt
1/2 tsp. paprika
1/2 tsp. pepper
Mix and toss just before serving

Sugared Nuts:
1 C. nuts, chopped
1/2 C. sugar
Heat over low-med heat stirring frequently. Don't add water or anything else because the sugar will slowly melt and carmelize. Once melted pour out onto greased cookie sheet. Once cooled break into pieces and toss with salad.

Calzones

Rhodes frozen bread dough
Mozzarella Cheese
Cheddar Cheese
Pepperoni
Ham Spaghetti Sauce

Thaw bread dough and slice each loave into four pieces. Roll out each piece of dough into a circle. Place a slice of Mozz. cheese and a slice of Cheddar cheese. Place 4 Pepperoni slices, ham, and then another slice of each cheese on top. Fold dough in half to make a half moon. Press on edges with a fork to seal. Bake at 400 for 20 -25 minutes. Spoon spaghetti sauce on top. This is a great meal to make a bunch of and freeze some later. I first freeze them individually on a cookie sheet and then throw them in a freezer bag.
